Red, White, and Blue Berry Trifles!

For us AmericansJuly 4th is our National Independence Day and we love celebrating outside with loads of greasy, sugary and junky food…. at least most people do! However it is easy to have a fun refreshing and healthy dessert while showing your patriotic pride! (And for all my Canadian friends, simply leave out the blueberries and use more red fruits for Canada day, eh!) You can see from the pictures that I made 2 “American” trifles and 2 “Canadian” trifles!

Today I made this trifle in little individual cups, but you can easily make this like a traditional trifle in a large bowl, just double your ingredients depending on the size you are making. You can also swap out the granola for your favorite gluten free cookies crumbled up for a sweeter, more traditional trifle. By using the coconut milk for your whipped topping portion, you also don’t have to worry about the cream turning or spoiling on you which is great for outdoor picnics and parties! Now today, My coconut whipped cream gave me fits and ended up looking like melted ice cream… not so great for pictures but tasty non the less! You can by in the frozen section coconut whipped topping or use what ever whipped topping you would like!

2 cans full fat coconut milk, refrigerated
3-4 drops Young Living Lemon Vitality oil
1 cup fresh or frozen blueberries
1 cup fresh or frozen cherries
1 cup fresh or frozen blackberries
1 cup fresh or frozen raspberries
1 cup fresh or frozen strawberries
2 cups Young Living Einkorn Granola or your favorite granola

1 large trifle dish or 6 small cups

Open your coconut milk without shaking the cans and scoop out the coconut cream, and leave the coconut water in the can. Place the cream in a bowl and whip on high till you get what looked like whipped cream topping. Add your 3-4 drops of Lemon Vitality oil and stir. Now simply layer fruit, whipped topping, and granola in layers in your trifle dish or cups. Chill till you are ready to serve!
