
Instapot Chicken
If you need to make a big batch of moist yummy chicken in under 30 minutes, the Insta-Pot method is the best way to do it in my opinion!
I am still learning the amazing ways to use my insta-pot, from making brown rice, green beans, carrots, boiled eggs… and now moist chicken breast with pan gravy!
Sweet and Savory Chicken Breast
4-6 organic skinless chicken breasts
4 tbsp of maple syrup (You can sub honey for this or omit completely)
4 tbsp of coconut oil (or preferred cooking oil)
1 tsp salt
1 tsp black pepper
4 tsp seafood seasoning (like Old Bay or Primal Palate Seafood)
2 tsp dried thyme
1/4 cup bone broth or chicken stock
3-4 tsp arrowroot powder (used to thicken the gravy instead of flour or corn starch)
Place all the ingredients in the instapot (except for the arrowroot powder), place the lid on and push the poultry button (High Pressure for 15 minutes). Make sure your venting valve is on close and that your pot seals or it will not start the timer. Once your pot signals it is finished, vent the steam and remove the lid. Then turn the pot back on to saute’ and remove the chicken, leaving the broth in the pot. Place the arrowroot powder in a cup with 2 tbsp cold water and stir till dissolved. Once your broth in the pot is bubbling, add in the arrowroot liquid and whisk till your gravy is formed, about 5 minutes. Turn the pot off, and pour your gravy over the chicken and serve!
