Weekend Einkorn Waffles

Waffles are our go to weekend treat when we just want to relax and eat a late hearty breakfast on our patio! What is better than a hot crispy soft waffle fresh out of the waffle maker, topped with butter, maple syrup, blueberries….. I could keep going but I think you get the picture!

In the video I posted this morning to Facebook, you can see me make and Josh eat the Young Living Einkorn waffles! The recipe for both the Einkorn waffles and the High Protein waffles I enjoy are below.

Easy Einkorn Waffles

1 3/4 cups Young Living Einkorn flour
1 tablespoon baking powder
1/2 teaspoon sea salt
1 3/4 cups unsweetened almond milk
2 large eggs
1/2 cup melted butter or coconut oil if dairy free
1 teaspoon vanilla extract
Optional 2-3 drops of your favorite Vitality oil, such as cinnamon, lemon, etc

Whisk the flour, baking powder and salt together in a medium bowl. In another bowl, beat the milk, eggs, melted butter, vanilla extract and oils. Pour the wet mixture over the dry mixture and whisk until combined. Let sit five minutes to “develop” (just a fancy word for letting the baking powder activate).

Meanwhile, heat your waffle iron or griddle. Pour, or ladle, enough batter to cover about 2/3 of the surface (the rest will spread once you close the top). Most waffle irons have a light or timer that goes on or off, signaling the waffles are ready. A sure sign of doneness is once you see all the steam has stopped coming out.

Top while warm with your favorite toppings, Young Living True Grit Berry Syrup, Maple Syurp, berries, almond or other nut butters, honey or any other topping you enjoy!

To re-heat for later, warm in a 300 degree oven for about 5-8 minutes or until warm, or place in a toaster or toaster oven.

Makes 5-6 large Belgian waffles.

 

High Protein Grain-Free Waffles

1/4 cup coconut flour
1/4 cup Young Living Pure Protein Vanilla Spice or your favorite unsweetened or vanilla protein powder
1/4 tsp baking soda
1/2 tsp cream of tarter
1 tsp stevia powder
1/2 cup unsweetened almond milk
2 tbsp melted butter or melted coconut oil
2 eggs

 

 

Whisk the coconut flour, protein, baking soda, cream of tarter, and stevia together in a medium bowl. In another bowl, beat the milk, eggs, and melted butter. Pour the wet mixture over the dry mixture and whisk until combined. Let sit a few minutes for the coconut flour to absorb the liquid.

Meanwhile, heat your waffle iron or griddle. Pour, or ladle, enough batter to cover about 2/3 of the surface (the rest will spread once you close the top). Most waffle irons have a light or timer that goes on or off, signaling the waffles are ready. A sure sign of doneness is once you see all the steam has stopped coming out.
